Tori Soboro Donburi
Japanese ground chicken rice bowl with sweetened scrambled eggs, tender ground chicken, and fresh vegetables over fluffy rice.
Ingredients
- 12 oz ground chicken
- 2 eggs, beaten
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1/4 cup sake (or water)
- 2 tsp sugar
- 2 tsp fresh ginger, minced
- 2 cloves garlic, minced
- 2 tsp vegetable oil
- 1/2 cup green peas (frozen)
- 1/2 cup carrots, finely diced
- 2 cups cooked short-grain rice
- 1/2 sheet nori (seaweed sheet), shredded
- 2 green onions, thinly sliced

In a small bowl, mix 2 tbsp soy sauce, 1 tbsp mirin, 1/4 cup sake (or water), and 2 tsp sugar.

Heat half 2 tsp vegetable oil in a skillet over medium heat.

Add 2 beaten eggs and scramble gently until cooked through but still soft. Transfer to a plate.

In the same skillet, add remaining oil and cook 12 oz ground chicken over medium-high heat, breaking it up as it cooks, for 5 minutes.

Add 2 tsp minced fresh ginger, 2 cloves minced garlic, 1/2 cup finely diced carrots, and 1/2 cup green peas (frozen). Cook for 2 minutes.

Pour in the sauce mixture and simmer for 2 minutes until the chicken is glazed and cooked through.

Divide 2 cups cooked short-grain rice between two bowls.

Top each bowl with the chicken mixture on one side and the scrambled eggs on the other.

Garnish with 1/2 sheet shredded nori (seaweed sheet) and 2 thinly sliced green onions.
