Omurice
Japanese omelette rice with buttery fried rice wrapped in a fluffy soft omelette, topped with tomato sauce and garnished elegantly.
Ingredients
- 2 cups cooked rice (day-old, chilled)
- 4 oz cooked chicken, diced
- 1/2 onion, finely diced
- 1/2 cup frozen peas and carrots, thawed
- 3 tbsp butter
- 2 tbsp soy sauce
- pinch white pepper
- 3 eggs, beaten with splash of milk
- 1 tbsp butter (for omelette)
- 1/4 cup tomato sauce or ketchup
- 1 green onions, thinly sliced

Heat half 3 tbsp butter in a skillet over medium-high heat.

Sauté 1/2 finely diced onion until softened, about 2 minutes.

Add 4 oz diced cooked chicken and 1/2 cup thawed frozen peas and carrots and cook for 2 minutes.

Add 2 cups cooked rice (day-old, chilled) and stir-fry until heated through, about 3 minutes.

Season with 2 tbsp soy sauce and pinch white pepper. Transfer to a plate.

Wipe the skillet clean and heat 1 tbsp butter (for omelette) over medium heat.

Pour in 3 beaten with splash of milk eggs and gently push from the edges to the center, allowing uncooked egg to flow to the edges.

When the top is still slightly wet but the bottom is set, slide the omelette onto a plate with the fried rice.

Pour 1/4 cup tomato sauce or ketchup over the omelette in a drizzle pattern.

Garnish with 1 thinly sliced green onions and serve immediately.
