Pickled Garlic
Crisp whole garlic cloves steeped in a dill and peppercorn brine. This traditional relish mellows raw garlic pungency into a tangy, savory condiment.
Ingredients
- 1 lb garlic cloves, peeled
- 1.5 cups water
- 1.5 cups distilled white vinegar
- 4 tsp pickling salt
- 1 tbsp granulated sugar
- 1 tsp dill seeds
- 1 tsp black peppercorns
- 2 bay leaves

Pack 1 lb peeled garlic cloves, 1 tsp dill seeds, 1 tsp black peppercorns, and 2 bay leaves tightly into clean glass jars.

Combine 1.5 cups water, 1.5 cups distilled white vinegar, 4 tsp pickling salt, and 1 tbsp granulated sugar in a saucepan over medium-high heat.

Bring the brine to a boil, stirring until the salt and sugar fully dissolve.

Pour the hot liquid over the garlic mixture in the jars, leaving half an inch of headspace.
