Portokalopita
A traditional Greek dessert cake made with crisp shredded phyllo dough, Greek yogurt, and fresh orange zest, soaked in aromatic orange syrup.
Ingredients
- 16 oz phyllo dough, dried
- 1 cup granulated sugar
- 1 cup water
- 1 cup fresh orange juice
- 1 cinnamon stick
- 2/3 cup granulated sugar
- 14 oz Greek yogurt
- 1 cup vegetable oil
- 4 large eggs, beaten
- 2 tbsp orange zest, grated
- 1 tbsp baking powder

In a saucepan, combine 1 cup granulated sugar, 1 cup water, 1 cup fresh orange juice, and 1 cinnamon stick, then simmer for 8 minutes and let cool completely.

In a bowl, whisk 4 beaten large eggs, 2/3 cup granulated sugar, 14 oz Greek yogurt, 1 cup vegetable oil, 2 tbsp grated orange zest, and 1 tbsp baking powder until smooth.

Gradually fold 16 oz dried phyllo dough into the batter until all pieces are well coated.

Pour into a greased baking dish and bake at 350 degrees F for 40 to 45 minutes until golden brown.

Ladle the cooled syrup evenly over the hot cake right after taking it out of the oven.
