Salgamli Bulgur Salatasi
A vibrant grain salad cooked in tangy turnip juice, tossed with sweet corn, pickles, and fresh herbs. Perfect for picnics or as a flavorful side dish.
Ingredients
- 2 cups salgam juice
- 1 cup water
- 2 cups coarse bulgur
- 1/4 cup extra virgin olive oil
- 2 tbsp pomegranate molasses
- 1 cup pickled cucumbers, diced
- 1 cup sweet corn, drained
- 1/2 cup fresh flat-leaf parsley, chopped
- 1/4 cup fresh dill, chopped
- 4 green onions, sliced

Combine 2 cups salgam juice and 1 cup water in a saucepan over medium heat and bring to a boil.

Add 2 cups coarse bulgur, cover with a lid, reduce heat to low, and simmer for 15 minutes until liquid is absorbed.

Remove from heat and allow the cooked bulgur to cool completely to room temperature.

Transfer cooled bulgur to a large bowl and fluff with a fork.

Whisk together 1/4 cup extra virgin olive oil and 2 tbsp pomegranate molasses in a small cup.

Fold 1 cup diced pickled cucumbers, 1 cup drained sweet corn, 1/2 cup chopped fresh flat-leaf parsley, 1/4 cup chopped fresh dill, and 4 sliced green onions into the bulgur, then drizzle with the dressing and toss thoroughly.
