Shakshuka with Merguez Sausage
Spiced eggs poached in a rich tomato sauce with North African merguez sausage, finished with paprika and cilantro.
Ingredients
- 12 oz merguez sausage, sliced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 lg can canned crushed tomatoes
- 1 tbsp tomato paste
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 8 eggs
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh cilantro, chopped
- 4 pita or flatbread

Heat 2 tbsp olive oil in a large skillet over medium heat. Brown the 12 oz sliced merguez sausage, about 4 minutes, until cooked through (internal temperature 160°F), then remove and set aside.

In the same skillet, sauté 1 diced onion until soft, about 5 minutes. Add 4 cloves minced garlic and cook 1 minute until fragrant.

Stir in 1 tbsp tomato paste, 1/2 tsp ground cumin, 1/2 tsp smoked paprika, and 1/4 tsp cayenne pepper. Cook 1 minute to bloom the spices.

Add 1 lg can canned crushed tomatoes and bring to a gentle simmer. Cook 5 minutes, stirring occasionally.

Return the merguez to the skillet. Reduce heat to low.

Using the back of a spoon, create 4 wells in the tomato sauce. Crack one 8 eggs into each well.

Cover the skillet and cook for 5-8 minutes until the eggs reach your desired doneness.

Season with 1/2 tsp salt and 1/4 tsp black pepper. Garnish with 1/4 cup chopped fresh cilantro.

Serve hot with warm 4 pita or flatbread on the side.
