Thai Roti
A popular Thai street snack featuring a crispy, flaky fried pastry stuffed with sweet banana slices and drizzled with rich condensed milk.
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp fine salt
- 1/4 cup sweetened condensed milk
- 2 tbsp unsalted butter, melted
- 1/2 cup warm water
- 2 tbsp vegetable oil
- 2 ripe bananas, sliced

Mix 2 cups all-purpose flour, 1/2 tsp fine salt, half of the 1/4 cup sweetened condensed milk, 2 tbsp melted unsalted butter, and 1/2 cup warm water in a bowl until a soft dough forms.

Divide the dough into equal portions, coat with 2 tbsp vegetable oil, and let rest covered for 30 minutes.

Flatten each dough ball on an oiled work surface until paper thin.

Heat a lightly oiled skillet over medium heat and lay one dough sheet flat in the pan.

Place 2 sliced ripe bananas in the center, fold the edges inward to form a square packet, and fry until golden brown on both sides.

Transfer to a plate, cut into bite-sized squares, and drizzle with remaining sweetened condensed milk.
