Turn Cornmeal
A savory Caribbean dish where fine yellow cornmeal is slow cooked with coconut milk, okra, aromatic herbs, and spices until thick and smooth.
Ingredients
- 1 cup fine yellow cornmeal
- 1 cup coconut milk
- 2 cups vegetable broth
- 1 cup fresh okra, sliced
- 1/2 cup yellow onion, diced
- 2 garlic cloves, minced
- 2 stems green onions, chopped
- 2 tbsp unsalted butter
- 3 fresh thyme sprigs
- 1 tsp salt
- 1 pepper scotch bonnet pepper, halved

Combine 1 cup coconut milk, 2 cups vegetable broth, 1 cup sliced fresh okra, 1/2 cup diced yellow onion, 2 minced garlic cloves, 2 stems chopped green onions, 3 fresh thyme sprigs, 2 tbsp unsalted butter, 1 tsp salt, and 1 pepper halved scotch bonnet pepper in a heavy pot over medium heat.

Bring the mixture to a simmer and cook for 8 minutes until the vegetables are softened.

Remove scotch bonnet pepper and fresh thyme sprigs from the pot using tongs.

Reduce heat to low and gradually whisk in 1 cup fine yellow cornmeal in a thin stream to avoid lumps.

Switch to a sturdy wooden spoon and turn the cornmeal continuously for 15 to 20 minutes until dense and pulled away from the pot sides.
