Veal Parmigiana
Tender pounded veal cutlets are breaded, pan-fried until golden, and baked under marinara sauce and melted mozzarella cheese.
Ingredients
- 1.5 lbs veal cutlets, pounded thin
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 1 tsp salt
- 1/2 tsp black pepper, ground
- 1/4 cup olive oil
- 2 cups marinara sauce, warmed
- 2 cups mozzarella cheese, shredded

Preheat oven to 400 degrees F. Season 1.5 lbs pounded thin veal cutlets with 1 tsp salt and 1/2 tsp ground black pepper.

Dredge veal in 1/2 cup all-purpose flour, dip into 2 beaten eggs, then coat thoroughly in 1 cup Italian breadcrumbs mixed with half of the 1/2 cup grated Parmesan cheese.

Heat 1/4 cup olive oil in a skillet over medium-high heat and fry veal for 2 minutes per side until golden brown and internal temperature reaches 145 degrees F.

Spread half of the 2 cups warmed marinara sauce in a baking dish, place veal on top, then layer with remaining marinara, 2 cups shredded mozzarella cheese, and remaining Parmesan.

Bake for 12 to 15 minutes until mozzarella is melted and bubbling.
