Cig Kofte
A traditional Turkish kneaded bulgur patty spiced with pepper paste, isot pepper, and fresh herbs. Served cold or at room temperature, usually wrapped in lettuce leaves.
Ingredients
- 2 cups fine dark bulgur
- 1.5 cups hot water
- 3 tbsp tomato paste
- 3 tbsp red pepper paste
- 2 tbsp isot pepper flakes
- 2 tbsp pomegranate molasses
- 1/4 cup extra virgin olive oil
- 1 yellow onion, grated
- 2 garlic cloves, minced
- 2 tbsp lemon juice
- 1/2 cup flat-leaf parsley, chopped

Place 2 cups fine dark bulgur in a large mixing bowl and pour 1.5 cups hot water over it, covering tightly for 10 minutes to soften.

Squeeze excess liquid thoroughly from the 1 grated yellow onion using paper towels.

Add onion, 2 minced garlic cloves, 3 tbsp tomato paste, 3 tbsp red pepper paste, and 2 tbsp isot pepper flakes to the softened bulgur.

Knead the mixture firmly with your hands for 15 minutes until the bulgur granules break down and turn cohesive.

Pour in 1/4 cup extra virgin olive oil, 2 tbsp pomegranate molasses, and 2 tbsp lemon juice, kneading for another 5 minutes.

Fold in 1/2 cup chopped flat-leaf parsley until evenly incorporated.

Squeeze small portions of the dough in your palm to form elongated patties with finger impressions.
