Crayfish Bisque
A velvety Louisiana soup infused with aromatic trinity vegetables, warm Cajun spices, and tender crayfish tails.
Ingredients
- 4 tbsp unsalted butter
- 1 cup yellow onion, diced
- 1/2 cup celery, diced
- 1/2 cup green bell pepper, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tbsp Cajun seasoning
- 3 tbsp all-purpose flour
- 4 cups seafood stock
- 1/2 cup heavy cream
- 1 lb cooked crayfish tail meat

Melt 4 tbsp unsalted butter in a large pot over medium heat.

Add 1 cup diced yellow onion, 1/2 cup diced celery, 1/2 cup diced green bell pepper, and 4 minced garlic cloves; cook for 6 minutes until tender.

Stir in 2 tbsp tomato paste, 1 tbsp Cajun seasoning, and 3 tbsp all-purpose flour, cooking for 2 minutes to form a brown roux base.

Slowly whisk in 4 cups seafood stock and simmer for 15 minutes until thickened.

Purée the soup base in a blender until smooth, then return it to the pot.

Stir in 1/2 cup heavy cream and 1 lb cooked crayfish tail meat; warm until tails reach an internal temperature of 145F.
