Hawaiian Plate Lunch
The iconic plate lunch with kalua pork, white rice, creamy macaroni salad, and fresh pineapple. A local favorite that captures the spirit of Hawaiian comfort food.
Ingredients
- 1.5 lbs kalua pork (rotisserie or cooked pulled pork)
- 4 cups white rice (cooked)
- 12 oz elbow macaroni
- 1 cup mayonnaise
- 2 tbsp apple cider vinegar
- 2 tbsp sugar
- to taste salt and black pepper
- 2 cups fresh pineapple (sliced)
- 4 tbsp green onions, chopped

Cook 12 oz elbow macaroni according to package directions until just tender. Drain and set aside to cool.

In a large bowl, whisk together 1 cup mayonnaise, 2 tbsp apple cider vinegar, 2 tbsp sugar, and to taste salt and black pepper.

Add the cooled pasta to the dressing and toss until evenly coated. Set aside.

Divide 4 cups white rice (cooked) among four plates, creating a bed for each serving.

Top each plate with a portion of 1.5 lbs kalua pork (rotisserie or cooked pulled pork).

Add a generous scoop of macaroni salad next to the pork.

Arrange 2 cups fresh pineapple (sliced) slices on the plate.

Garnish with 4 tbsp chopped green onions and serve.
