Lambi Stew
Tender conch simmered in a rich tomato-based stew with peppers, garlic, and aromatic spices. A Haitian seafood classic.
Ingredients
- 2 lbs frozen conch, thawed and cleaned, cubed
- 1/4 cup fresh lime juice
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 red or green bell pepper, chopped
- 2 tbsp tomato paste
- 1 can diced tomatoes (canned)
- 2 cups chicken broth
- 2 sprigs fresh thyme (or dried)
- 1/2 tsp salt
- 1/2 tsp black pepper

Combine 2 lbs cubed frozen conch, thawed and cleaned with 1/4 cup fresh lime juice and let sit for 5 minutes to tenderize.

Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 chopped onion, 4 cloves minced garlic, and 1 chopped red or green bell pepper. Sauté until softened, about 5 minutes.

Stir in 2 tbsp tomato paste and cook for 1 minute to deepen the flavor.

Add the frozen conch, thawed and cleaned and cook for 3-4 minutes, stirring occasionally.

Pour in 1 can diced tomatoes (canned) and 2 cups chicken broth. Add 2 sprigs fresh thyme (or dried), 1/2 tsp salt, and 1/2 tsp black pepper.

Bring to a simmer, then reduce heat to low and cook uncovered for 30-35 minutes until the frozen conch, thawed and cleaned is very tender.

Adjust seasonings and serve hot with rice or bread.
