Legume Soup
A hearty Haitian vegetable and beef soup with simmered cabbage, chayote, eggplant, and vibrant spices.
Ingredients
- 1.5 lbs beef chuck roast, cubed
- 2 tbsp lime juice
- 1/4 cup green seasoning paste
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 medium chayote squash, diced
- 1 small eggplant, cubed
- 2 cups green cabbage, chopped
- 2 cups fresh spinach, chopped
- 1 cup carrots, sliced
- 4 cups beef broth
- 1 habanero pepper, whole

Marinate 1.5 lbs cubed beef chuck roast with 2 tbsp lime juice and 1/4 cup green seasoning paste for 30 minutes.

Heat 2 tbsp olive oil in a large pot over medium-high heat and brown the beef chuck for 8 minutes until internal temperature reaches 145°F.

Stir in 2 tbsp tomato paste and cook for 2 minutes.

Add 1 medium diced chayote squash, 1 small cubed eggplant, 2 cups chopped green cabbage, 1 cup sliced carrots, and 4 cups beef broth to the pot, then place 1 whole habanero pepper on top.

Cover pot and simmer for 45 minutes until beef internal temperature reaches at least 160°F and vegetables are tender.

Remove habanero, mash vegetables into a coarse puree, stir in 2 cups chopped fresh spinach, and simmer 5 minutes until wilted.
