Papaitan
A traditional Filipino soup cooked with beef offal, aromatic ginger, chilies, and a signature bitter citrus broth.
Ingredients
- 2 tbsp vegetable oil
- 2 tbsp fresh ginger, minced
- 4 cloves garlic, minced
- 1 yellow onion, diced
- 1 lb beef tripe, cleaned, diced
- 1/2 lb beef heart, diced
- 2 tbsp fish sauce
- 6 cups water
- 2 tbsp beef bile
- 2 tbsp calamansi juice
- 4 bird's eye chilies, sliced

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 2 tbsp minced fresh ginger, 4 cloves minced garlic, and 1 diced yellow onion, sautéeing until soft and fragrant, about 3 minutes.

Add 1 lb cleaned, diced beef tripe and 1/2 lb diced beef heart, cooking for 10 minutes until browned and meat reaches an internal temperature of 165°F.

Stir in 2 tbsp fish sauce and cook for 2 minutes.

Pour in 6 cups water and bring to a boil. Reduce heat to low, cover, and simmer for 60 minutes until tender.

Stir in 2 tbsp beef bile, 2 tbsp calamansi juice, and 4 sliced bird's eye chilies, then simmer uncovered for 10 minutes before serving.
