Pastel de Camarão Crocante

Ingredients
- 24 wonton wrappers
- 8 oz fresh shrimp, peeled, deveined, chopped
- 4 oz cream cheese, softened
- 1/2 cup cheddar cheese, shredded
- 2 green onion, finely chopped
- 1 clove garlic, minced
- 2 tbsp lemon juice (fresh)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups vegetable oil (for frying)
- 1/4 cup water

In a bowl, mix 8 oz peeled, deveined, chopped fresh shrimp, 4 oz softened cream cheese, 1/2 cup shredded cheddar cheese, 2 finely chopped green onion, 1 clove minced garlic, 2 tbsp lemon juice (fresh), 1/2 tsp salt, and 1/4 tsp black pepper.

Place a 24 wonton wrappers on a clean work surface with one corner pointing toward you, arranged in a diamond shape.

Place 1 teaspoon of filling in the center of each wrapper. Dip your finger in 1/4 cup water and wet the edges of the wrapper.

Fold the wrapper in half diagonally to form a triangle, pressing edges firmly to seal.

Fold the left and right corners toward the center and press to seal, creating a small envelope shape.

Heat 4 cups vegetable oil (for frying) in a deep pot or fryer to 350°F. Test with a small piece of wrapper; it should sizzle immediately.

Working in batches of 4-5, carefully place pastels into the hot oil. Fry 2-3 minutes, turning once, until they are golden brown and crispy.

Remove with a slotted spoon and drain on paper towels. Serve immediately while hot and crispy.
