Patsas
A traditional Greek tripe soup slowly simmered until tender, served with a sharp garlic-vinegar dressing and crushed red pepper.
Ingredients
- 2 lbs beef tripe, chopped
- 1 lb calf foot, split
- 10 cups water
- 6 garlic cloves, minced
- 1/2 cup red wine vinegar
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp red pepper flakes

Rinse 2 lbs chopped beef tripe and 1 lb split calf foot thoroughly under cold water.

Place 2 lbs chopped beef tripe and 1 lb split calf foot into a stockpot, add 10 cups water, and bring to a boil over high heat.

Skim foam from the surface, lower heat, cover, and simmer for 2 hours until tender, ensuring meat reaches an internal temperature of 165F.

Remove calf foot, shred meat from bones, return meat to pot, and stir in 1 tbsp salt.

Mix 6 minced garlic cloves, 1/2 cup red wine vinegar, and 2 tbsp olive oil in a bowl to create skordostoubi.

Ladle soup into warm bowls and top with skordostoubi and 1 tsp red pepper flakes.
