Pea and Mint Soup
A vibrant green soup combining sweet peas and fresh mint for a light, refreshing meal. Simple to prepare and naturally creamy without heavy dairy.
Ingredients
- 1 tbsp olive oil
- 2 shallots, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 4 cups frozen green peas
- 1/2 cup fresh mint leaves, chopped
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper

Heat 1 tbsp olive oil in a medium pot over medium heat.

Add 2 diced shallots and 2 minced garlic cloves, stirring until softened for about 3 minutes.

Pour in 4 cups vegetable broth and bring the liquid to a gentle simmer.

Stir in 4 cups frozen green peas and cook for 3 minutes until tender and bright green.

Remove pot from heat and stir in 1/2 cup chopped fresh mint leaves, 1 tbsp lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper.
