Pork Tocino
Sweet and savory Filipino cured pork sliced thin, cured in a garlic and pineapple marinade, then simmered and fried until golden and caramelized.
Ingredients
- 2 lbs pork shoulder, thinly sliced
- 1/2 cup brown sugar
- 2 tbsp soy sauce
- 6 garlic cloves, minced
- 1/4 cup pineapple juice
- 1 tsp ground black pepper
- 1 tsp kosher salt
- 1 cup water
- 2 tbsp vegetable oil

In a bowl, combine 1/2 cup brown sugar, 2 tbsp soy sauce, 6 minced garlic cloves, 1/4 cup pineapple juice, 1 tsp ground black pepper, and 1 tsp kosher salt.

Add 2 lbs thinly sliced pork shoulder to the cure mixture, toss well, and refrigerate covered for at least 24 hours.

Transfer cured pork and liquid into a skillet with 1 cup water over medium heat.

Cover and simmer for 15 minutes until pork is tender.

Uncover, let liquid evaporate, then add 2 tbsp vegetable oil and fry pork until caramelized and internal temperature reaches 145F.
