Rahmschwammerl
A traditional Bavarian mushroom ragout cooked in a silky cream sauce finished with fresh herbs and lemon juice.
Ingredients
- 1 lb cremini mushrooms, sliced
- 2 tbsp unsalted butter
- 1 small yellow onion, finely diced
- 2 garlic cloves, minced
- 1 tbsp all-purpose flour
- 1 cup vegetable broth
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 2 tsp fresh lemon juice
- 1/4 cup fresh parsley, finely chopped

Melt 2 tbsp unsalted butter in a large skillet over medium-high heat.

Add 1 lb sliced cremini mushrooms and sauté for 6 to 8 minutes until browned and liquid evaporates.

Add 1 small finely diced yellow onion and 2 minced garlic cloves, cooking for 3 minutes until softened.

Sprinkle in 1 tbsp all-purpose flour and stir constantly for 1 minute.

Slowly pour in 1 cup vegetable broth, scraping up any browned bits, and simmer for 3 minutes until thickened.

Reduce heat to low and stir in 1/2 cup sour cream, 1/4 cup heavy cream, and 2 tsp fresh lemon juice until smooth.

Remove from heat and stir in 1/4 cup finely chopped fresh parsley before serving.
