  • 2 small red chili peppers, minced
  • 4 tbsp fresh lemon juice
  • 6 tbsp olive oil
  • 1/4 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

    Preheat oven to 400°F. Place the 1.5 lbs cleaned and gutted whole fish (sea bass or snapper) on a sheet of foil or in a baking dish.

    Roast the 2 lg roasted and peeled red bell peppers directly over a gas flame or under the broiler until charred all over, about 8 minutes. Place in a plastic bag for 5 minutes to steam. Peel off the charred skin.

    In a food processor, combine roasted peppers, 1/2 cup chopped fresh cilantro, 4 tbsp chopped fresh parsley, 4 minced garlic cloves, 2 small minced red chili peppers, 4 tbsp fresh lemon juice, 6 tbsp olive oil, 1/4 tsp ground cumin, 1/2 tsp salt, and 1/4 tsp black pepper. Pulse until you achieve a chunky sauce consistency.

    Spread half of the sauce over and inside the cavity of the fish.

    Bake the fish for 15-20 minutes until the flesh flakes easily when tested with a fork. Internal temperature should reach 145°F.
