Sweet Garlic Longganisa
A classic skinless sausage cured with fresh garlic, brown sugar, and spices, cooked until golden and caramelized.
Ingredients
- 1 lb ground pork
- 8 garlic cloves, minced
- 3 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1/2 tsp ground black pepper
- 1 tsp kosher salt
- 1/2 cup water
- 2 tbsp vegetable oil

Mix 1 lb ground pork, 8 minced garlic cloves, 3 tbsp brown sugar, 2 tbsp soy sauce, 1 tbsp apple cider vinegar, 1 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp ground black pepper together in a bowl until sticky and uniform.

Shape the sausage mixture into small logs about two inches long.

Add 1/2 cup water and 2 tbsp vegetable oil to a skillet over medium heat and lay in the sausage logs.

Simmer uncovered until the water evaporates, then fry the sausages in the remaining rendered fat for 5 to 7 minutes until caramelized and the internal temperature reaches 160 degrees F.
