Arroz con Mariscos
A flavorful rice dish simmered with a blend of mixed seafood, aromatic aji amarillo paste, and vegetables.
Ingredients
- 2 tbsp olive oil
- 1 cup red onion, diced
- 4 garlic cloves, minced
- 3 tbsp aji amarillo paste
- 2 tbsp tomato paste
- 1.5 cups long-grain white rice, rinsed
- 1/2 cup dry white wine
- 3 cups seafood stock
- 1 red bell pepper, diced
- 1/2 cup frozen peas, thawed
- 1.5 lbs mixed seafood, cleaned
- 1/4 cup fresh cilantro, chopped

Heat 2 tbsp olive oil in a large skillet or paella pan over medium heat.

Add 1 cup diced red onion and 4 minced garlic cloves, sautéing for 5 minutes until soft.

Stir in 3 tbsp aji amarillo paste and 2 tbsp tomato paste, cooking for 3 minutes until fragrant.

Add 1.5 cups rinsed long-grain white rice and toss to coat with the paste mixture for 2 minutes.

Pour in 1/2 cup dry white wine and simmer until mostly evaporated, then add 3 cups seafood stock and bring to a boil.

Reduce heat to low, cover, and simmer for 15 minutes until the rice is almost tender.

Fold in 1 diced red bell pepper, 1/2 cup thawed frozen peas, and 1.5 lbs cleaned mixed seafood, then cover and cook for 7 to 8 minutes until the seafood reaches an internal temperature of 145F.

Remove from heat, stir in 1/4 cup chopped fresh cilantro, and let rest covered for 5 minutes before serving.
