Chewy glutinous rice balls filled with sweet mung bean paste, served floating in a warm ginger syrup and finished with coconut sauce.
Ingredients
- 1/2 cup split yellow mung beans, soaked
- 2 tbsp white granulated sugar
- 1/2 tsp fine salt
- 2 cups glutinous rice flour
- 3/4 cup warm water
- 1 cup palm sugar, chopped
- 2 tbsp fresh ginger, julienned
- 1 cup canned coconut milk
- 1 tsp tapioca starch
- 1 tbsp white sesame seeds, toasted

Steam 1/2 cup soaked split yellow mung beans until soft, then mash with 2 tbsp white granulated sugar and a pinch of 1/2 tsp fine salt before rolling into small spheres.

Mix 2 cups glutinous rice flour with 3/4 cup warm water in a bowl to form a smooth dough.

Flatten dough portions, wrap each around a mung bean sphere, and roll until smooth.

Boil the stuffed rice balls in water until they float, then transfer them to ice water.

Simmer 1 cup chopped palm sugar, 2 tbsp julienned fresh ginger, and a pinch of 1/2 tsp fine salt in 3 cups of water to make ginger syrup.

Combine 1 cup canned coconut milk, 1 tsp tapioca starch, and remaining 1/2 tsp fine salt over medium heat until thickened.

Warm rice balls in the ginger syrup, ladle into bowls, top with coconut sauce, and sprinkle with 1 tbsp toasted white sesame seeds.
