Clam Salad
Tender steamed clams tossed with crisp shredded cabbage, aromatic fresh herbs, and a zesty lime chili dressing.
Ingredients
- 2 lbs Manila clams, rinsed
- 3 tbsp fresh lime juice
- 2 tbsp fish sauce
- 2 tbsp granulated sugar
- 2 garlic clove, minced
- 2 Thai bird eye chili, minced
- 3 cups green cabbage, shredded
- 1 cup carrot, julienned
- 1/2 cup fresh mint leaves, torn
- 1/2 cup fresh cilantro, chopped
- 1/4 cup roasted peanuts, crushed

Bring a small pot of water to a boil over medium-high heat.

Add 2 lbs rinsed Manila clams, cover tightly, and steam for 5 minutes until shells open fully and reach an internal temperature of 145°F.

Remove meat from shells, discard unopened clams, and allow meat to cool completely.

In a small bowl, whisk 3 tbsp fresh lime juice, 2 tbsp fish sauce, 2 tbsp granulated sugar, 2 minced garlic clove, and 2 minced Thai bird eye chili until sugar dissolves.

In a large bowl, combine 3 cups shredded green cabbage, 1 cup julienned carrot, 1/2 cup torn fresh mint leaves, 1/2 cup chopped fresh cilantro, and cooled clam meat.

Drizzle dressing overall, toss gently to combine, and top with 1/4 cup crushed roasted peanuts before serving.
