Kibe
Crispy Brazilian street food croquettes made with seasoned ground beef and fine bulgur wheat, deep fried until golden brown.
Ingredients
- 1 cup fine bulgur wheat
- 1 lb lean ground beef
- 1 small yellow onion, finely minced
- 3 garlic cloves, minced
- 1/4 cup fresh mint leaves, finely chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground allspice
- 3 cups vegetable oil

Soak 1 cup fine bulgur wheat in warm water for 15 minutes, then drain and squeeze out all excess liquid thoroughly.

In a large bowl, combine the drained bulgur, 1 lb lean ground beef, 1 small finely minced yellow onion, 3 minced garlic cloves, 1/4 cup finely chopped fresh mint leaves, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp ground allspice.

Knead or pulse the mixture in a food processor until smooth and sticky.

Shape portions of the mixture into small oval croquettes with tapered tips at both ends.

Heat 3 cups vegetable oil in a heavy pot over medium-high heat until it reaches 350 degrees Fahrenheit.

Fry croquettes in small batches for 4 to 5 minutes until deep golden brown, verifying the internal temperature reaches 160 degrees Fahrenheit.
