Malanga Puré
A smooth Cuban staple side dish made from boiled malanga root mashed with garlic mojo, butter, and warm milk.
Ingredients
- 1.5 lbs malanga root, peeled, cubed
- 1 tsp salt
- 3 tbsp unsalted butter, softened
- 1/2 cup whole milk, warmed
- 1 tbsp extra-virgin olive oil
- 3 garlic cloves, minced
- 1 tsp fresh lime juice

Place 1.5 lbs peeled, cubed malanga root in a large pot, cover with cold water, and add half of the 1 tsp salt.

Bring to a boil over medium-high heat, then cook for 15 to 20 minutes until tender when pierced with a fork.

Drain the malanga root thoroughly and return it to the warm pot.

Heat 1 tbsp extra-virgin olive oil in a small skillet over low heat, add 3 minced garlic cloves, and cook for 1 minute until fragrant without browning.

Mash the malanga root while incorporating 3 tbsp softened unsalted butter, 1/2 cup warmed whole milk, warm garlic oil, 1 tsp fresh lime juice, and remaining salt until smooth and creamy.
