Instructions

    Season 3 lbs cubed beef chuck or stew meat with 2 tbsp fresh lime juice, 1/2 tsp salt, and 1/2 tsp black pepper. Let sit for 10 minutes.

    Heat 2 tbsp vegetable oil in a large pot or Dutch oven over medium-high heat.

    Brown beef chuck or stew meat in batches for 5-7 minutes per batch. Remove and set aside.

    In the same pot, add 1 chopped onion, 8 cloves minced garlic, and 1 chopped bell pepper. Sauté for 4-5 minutes until softened.
