Loukoumi
Delicate and chewy confection scented with floral rose water and lightly dusted with powdered sugar.
Ingredients
- 3 cups granulated sugar
- 1.5 cups water
- 1 tbsp lemon juice
- 1 cup cornstarch
- 1/2 tsp cream of tartar
- 2 cups water
- 1 tbsp rose water
- 1/2 cup powdered sugar, sifted

Combine 3 cups granulated sugar, 1.5 cups water, and 1 tbsp lemon juice in a saucepan, bringing to a boil until reaching 240 degrees F.

In a second saucepan, whisk 1 cup cornstarch, 1/2 tsp cream of tartar, and 2 cups water over medium heat until a thick gel forms.

Slowly pour the hot syrup into the cornstarch gel while whisking constantly to prevent lumps.

Simmer on low heat for 45 minutes, stirring frequently, until pale amber and gelatinous.

Remove from heat and stir in 1 tbsp rose water.

Pour into a parchment-lined dish, cool for 4 hours, cut into cubes, and dust with 1/2 cup sifted powdered sugar.
