  • 1 cup cucumber, julienned
  • 4 garlic cloves, minced
  • 2 tbsp soy sauce
  • 2 tbsp Chinese black vinegar

  • 1/4 cup fresh cilantro, chopped

    Bring a pot of water to a boil and blanch 6 oz soaked, cut dried tofu skin sticks for 2 minutes, then drain and rinse under cold water.

    In a large bowl, whisk together 4 minced garlic cloves, 2 tbsp soy sauce, 2 tbsp Chinese black vinegar, 1 tbsp chili oil, and 2 tsp toasted sesame oil.

    Add 6 oz soaked, cut dried tofu skin sticks, 1 cup julienned cucumber, and 1/4 cup chopped fresh cilantro to the bowl and toss thoroughly to coat.
