Tubani
A savory West African steamed pudding made from whipped black-eyed pea flour, served warm with sliced onions and chili oil.
Ingredients
- 2 cups black-eyed pea flour
- 2 cups warm water
- 1/2 tsp baking soda
- 1 tsp fine salt
- 2 tbsp vegetable oil
- 1 red onion, thinly sliced
- 1 tsp ground cayenne pepper

In a large bowl, whisk together 2 cups black-eyed pea flour, 1/2 tsp baking soda, and 1 tsp fine salt.

Gradually add 2 cups warm water while whisking vigorously until a smooth batter forms.

Spoon batter into foil sheets and wrap securely into sealed packages.

Place wrapped packages into a steamer basket set over boiling water, cover, and steam for 40 minutes.

Heat 2 tbsp vegetable oil in a small pan and cook 1 thinly sliced red onion for 3 minutes until softened.

Unwrap puddings and top with softened red onion, warm vegetable oil, and 1 tsp ground cayenne pepper.
