Tuo Zaafi
A traditional Northern Ghanaian dish consisting of smooth millet dough served alongside a savory beef stew and slimy ayoyo leaf soup.
Ingredients
- 2 cups millet flour
- 1/2 cup cassava flour
- 6 cups water
- 1 lb stewing beef, cubed
- 1 medium yellow onion, chopped
- 4 garlic cloves, minced
- 2 tsp fresh ginger, minced
- 1/4 cup tomato paste
- 4 cups jute leaves, chopped
- 2 tbsp vegetable oil
- 1 tsp salt

Heat 2 tbsp vegetable oil in a large pot over medium heat, then saute 1 medium chopped yellow onion, 4 minced garlic cloves, and 2 tsp minced fresh ginger until soft.

Add 1 lb cubed stewing beef, 1/4 cup tomato paste, and 1 tsp salt, stirring for 5 minutes until browned.

Pour in half of the water, cover, and simmer for 25 minutes until beef reaches an internal temperature of 145°F.

Stir in 4 cups chopped jute leaves and cook for 5 minutes until tender.

In a separate pot, stir 2 cups millet flour, 1/2 cup cassava flour, and the remaining water over medium heat until smooth and thick.

Serve warm scoops of dough alongside the beef and leaf soup.
