Beef Stroganoff with Mashed Potatoes
Tender strips of beef cooked with mushrooms and onions in a rich sour cream sauce, served over creamy mashed potatoes.
Ingredients
- 2 lbs Yukon Gold potatoes, peeled, cubed
- 4 tbsp unsalted butter
- 1/2 cup whole milk, warmed
- 1.5 lbs beef sirloin steak, sliced thin
- 1 tsp salt
- 1/2 tsp black pepper, ground
- 1 yellow onion, thinly sliced
- 8 oz cremini mushrooms, sliced
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 2 tsp Dijon mustard
- 1/2 cup sour cream

Boil 2 lbs peeled, cubed Yukon Gold potatoes in salted water for 15 minutes until tender, then drain and mash with 4 tbsp unsalted butter, 1/2 cup warmed whole milk, and half of the 1 tsp salt.

Season 1.5 lbs sliced thin beef sirloin steak with remaining 1 tsp salt and 1/2 tsp ground black pepper, then sear in a skillet over high heat for 3 minutes until internal temperature reaches 145°F and remove from pan.

Sauté 1 thinly sliced yellow onion and 8 oz sliced cremini mushrooms in the same skillet until softened, about 6 minutes, then add 2 minced garlic cloves and cook for 1 minute.

Stir in 2 tbsp all-purpose flour, then gradually whisk in 2 cups beef broth and 2 tsp Dijon mustard until thickened into a sauce.

Reduce heat to low, stir in 1/2 cup sour cream and 1.5 lbs sliced thin beef sirloin steak to warm through, then spoon over the mashed potatoes.
