Brigadeiro Gourmet
Elevated Brazilian chocolate truffle with gourmet touches like dark chocolate, coconut, or Nutella. Silky, decadent bonbons rolled in sprinkles or cocoa powder.
Ingredients
- 1.5 cans sweetened condensed milk
- 1/4 cup dark cocoa powder
- 3 oz dark chocolate (70% cacao), chopped
- 2 tbsp butter
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt (fleur de sel)
- 1/2 cup chocolate sprinkles
- 1/4 cup cocoa powder (for coating)

In a nonstick saucepan over medium heat, combine 1.5 cans sweetened condensed milk, 1/4 cup dark cocoa powder, and 2 tbsp butter.

Stir constantly with a wooden spoon for 10-12 minutes until the mixture thickens, pulls away from the sides, and reaches a fudgy consistency. It should be dark brown and thick.

Remove from heat and stir in 3 oz chopped dark chocolate (70% cacao), 1/2 tsp vanilla extract, and 1/4 tsp sea salt (fleur de sel) until the chocolate is fully melted and incorporated.

Pour the mixture onto a parchment-lined baking sheet and let cool to room temperature, about 10 minutes. It should still be slightly warm.

Once cool enough to handle, use a small spoon or ice cream scoop to portion the mixture into approximately 24 equal pieces.

Roll each piece quickly between your palms into a smooth ball. Work quickly, as the mixture hardens as it cools.

Place 1/2 cup chocolate sprinkles in one shallow bowl and 1/4 cup cocoa powder (for coating) in another.

Roll half of the brigadeiros in sprinkles and half in cocoa powder. Place on a parchment-lined tray.

Refrigerate for at least 30 minutes before serving. Store in an airtight container in the refrigerator for up to 1 week.
