Caldo de Feijão
A rich and smooth Brazilian black bean soup simmered with aromatic garlic, onion, and crispy meats.
Ingredients
- 4 oz bacon, chopped
- 1 cup calabresa sausage, diced
- 1 tbsp olive oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 4 cups cooked black beans with broth
- 2 bay leaves
- 1/2 tsp salt
- 1/4 cup green onions, sliced

In a pot over medium heat, render 4 oz chopped bacon and cook 1 cup diced calabresa sausage for 6 minutes until crispy and sausage reaches an internal temperature of 160F. Remove half the meat for garnish.

Add 1 tbsp olive oil, 1 diced yellow onion, and 4 minced garlic cloves to the pot; cook for 4 minutes until softened.

Add 4 cups cooked black beans with broth and 2 bay leaves to the pot, bring to a simmer, and cook for 10 minutes.

Remove 2 bay leaves and transfer the soup to a blender, pureeing until smooth.

Return soup to the pot, stir in 1/2 tsp salt, simmer for 3 minutes, and serve topped with reserved meat and 1/4 cup sliced green onions.
