Che Dau Do
A traditional sweet dessert soup featuring tender red adzuki beans in a light broth topped with creamy coconut sauce.
Ingredients
- 1 cup adzuki beans, soaked
- 5 cups water
- 2 pandan leaf, knotted
- 2/3 cup granulated sugar
- 1/4 tsp salt
- 1 cup canned coconut milk
- 2 tsp tapioca starch

Drain 1 cup soaked adzuki beans and add them to a pot with 5 cups water and 2 knotted pandan leaf.

Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 45 minutes until tender.

Stir in 2/3 cup granulated sugar and half of the 1/4 tsp salt, then simmer uncovered for 10 minutes until beans absorb sweetness.

In a small saucepan, combine 1 cup canned coconut milk, 2 tsp tapioca starch, and remaining 1/4 tsp salt, heating gently until thickened into a topping sauce.

Ladle warm bean soup into bowls and top with coconut sauce.
