Che Dau Trang
A classic Vietnamese sweet pudding featuring tender black-eyed peas and sticky rice simmered with pandan leaves, served warm with rich coconut sauce.
Ingredients
- 1 cup dried black-eyed peas, soaked
- 1/2 cup glutinous sticky rice, rinsed
- 2 pandan leaves, knotted
- 2/3 cup granulated sugar
- 1 cup canned coconut milk
- 2 tsp tapioca starch
- 1/4 tsp salt

In a medium pot, simmer 1 cup soaked dried black-eyed peas in water until tender, about 25 minutes, then drain.

In the pot, bring fresh water to a boil, then add 1/2 cup rinsed glutinous sticky rice and 2 knotted pandan leaves and cook for 15 minutes.

Fold in black-eyed peas and 2/3 cup granulated sugar, stirring gently for 10 minutes until thickened.

In a small pan, combine 1 cup canned coconut milk, 2 tsp tapioca starch, and 1/4 tsp salt over low heat until warm and thick.

Ladle pudding into bowls, remove pandan leaves, and serve topped with coconut sauce.
