Chicken Chop Suey
A classic Chinese-American stir-fry with tender chicken, crisp vegetables, and a savory sauce over crispy noodles.
Ingredients
- 1.5 lbs boneless, skinless chicken breast, sliced thin
- 3 tbsp vegetable oil
- 4 garlic cloves, minced
- 1 tsp fresh ginger, minced
- 4 cups green cabbage, shredded
- 2 celery stalks, sliced diagonal
- 1 cup canned water chestnuts, sliced
- 4 oz button mushrooms, sliced
- 1 cup chicken stock
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 3 tbsp water (for slurry)
- 1/2 tsp sesame oil
- 2 scallions, sliced
- 4 oz crispy chow mein noodles

Heat 3 tbsp vegetable oil in a large wok or skillet over high heat. Add 1.5 lbs sliced thin boneless, skinless chicken breast and cook until cooked through and golden, about 4 minutes. Transfer to a plate.

Add remaining oil to the wok. Add 4 minced garlic cloves and 1 tsp minced fresh ginger, cooking for 30 seconds until fragrant.

Add 4 cups shredded green cabbage, 2 sliced diagonal celery stalks, 4 oz sliced button mushrooms, and 1 cup sliced canned water chestnuts. Stir-fry for 3 minutes until vegetables are tender-crisp.

Return chicken to the wok. Add 1 cup chicken stock, 3 tbsp soy sauce, and 1 tbsp oyster sauce.

In a small bowl, mix 1 tbsp cornstarch and 3 tbsp water (for slurry) to create a slurry. Pour into the wok, stirring constantly for 1-2 minutes until sauce thickens.

Drizzle with 1/2 tsp sesame oil. Serve over 4 oz crispy chow mein noodles, garnished with 2 sliced scallions.
