Lugaw
A comforting Filipino rice porridge infused with aromatic ginger, garlic, and savory broth. Served piping hot with crispy garlic chips, fresh scallions, and citrus juice.
Ingredients
- 2 tbsp vegetable oil
- 6 cloves garlic, minced
- 2 tbsp fresh ginger, julienned
- 1 yellow onion, diced
- 1 cup glutinous rice, washed
- 6 cups chicken broth
- 2 tbsp fish sauce
- 4 stalks green onions, chopped
- 2 tbsp fried garlic
- 2 tbsp calamansi juice

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 diced yellow onion, 6 cloves minced garlic, and 2 tbsp julienned fresh ginger, sauteing for 3 to 4 minutes until soft and fragrant.

Stir in 1 cup washed glutinous rice and cook for 2 minutes to toast the grains slightly.

Pour in 6 cups chicken broth and bring the liquid to a boil.

Reduce heat to low, cover partially, and simmer for 25 minutes, stirring occasionally until thick.

Stir in 2 tbsp fish sauce and remove the pot from heat.

Ladle into bowls and top with 4 stalks chopped green onions, 2 tbsp fried garlic, and a drizzle of 2 tbsp calamansi juice.
