Lumpia Goreng
Malaysian fried spring rolls filled with cabbage, carrots, and shrimp. Golden, crispy, and incredibly delicious - the perfect appetizer or snack.
Ingredients
- 16 spring roll wrappers
- 1/2 lb shrimp, peeled and chopped
- 4 cups cabbage, finely shredded
- 2 carrots, julienned
- 2 cloves garlic, minced
- 2 green onions, chopped
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tsp sesame oil
- 2 cups vegetable oil for frying
- 4 tbsp water

In a skillet, stir-fry 2 cloves minced garlic until fragrant, then add 1/2 lb shrimp, peeled and chopped and cook until pink, about 2 minutes.

Add 4 cups finely shredded cabbage and 2 julienned carrots and stir-fry for 2-3 minutes until softened.

Season with 1 tbsp soy sauce, 1 tbsp oyster sauce, and 1/2 tsp sesame oil. Add 2 chopped green onions and toss. Remove from heat and let cool slightly.

Place a 16 spring roll wrappers on a clean surface and put 2 tablespoons of filling in the center.

Fold the bottom corner over the filling, then fold in the left and right corners.

Mix 4 tbsp water with a little flour to make a paste. Brush the top corner with this paste, then roll tightly to seal.

Heat 2 cups vegetable oil for frying in a deep skillet to 350°F.

Fry the lumpia in batches for 2-3 minutes per side until golden brown and crispy.

Remove with a slotted spoon and drain on paper towels. Serve hot with sweet and spicy dipping sauce.
