Masitas de Puerco
Crispy Cuban fried pork chunks marinated in sour orange juice, garlic, and warm spices, simmered until tender then crisped in oil.
Ingredients
- 2 lbs boneless pork shoulder, cut in chunks
- 1/2 cup sour orange juice
- 6 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/4 cup vegetable oil
- 1 yellow onion, thinly sliced

In a large bowl, toss 2 lbs cut in chunks boneless pork shoulder with 1/2 cup sour orange juice, 6 minced garlic cloves, 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp kosher salt, and 1/2 tsp ground black pepper. Marinate for 30 minutes.

Transfer pork and marinade into a heavy pot over medium-high heat with 1/2 cup water, cover, and simmer for 30 minutes until internal temperature reaches 165°F.

Uncover pot and allow liquid to evaporate completely.

Add 1/4 cup vegetable oil and fry pork chunks over medium-high heat for 8 to 10 minutes until dark golden brown and crispy.

Add 1 thinly sliced yellow onion to pot and fry for 3 minutes until softened, then serve immediately.
