Salted Herring with Onions and Potatoes
A classic Russian cold appetizer featuring tender boiled potatoes, rich salted herring, and crisp pickled onions dressed with unrefined sunflower oil.
Ingredients
- 1 lb salted herring fillets, sliced
- 1.5 lbs yellow potatoes, halved
- 1 red onion, thinly sliced
- 2 tbsp sunflower oil
- 1 tbsp white vinegar
- 1/4 cup fresh dill, chopped

Place 1.5 lbs halved yellow potatoes in a pot of cold salted water and bring to a boil over medium-high heat.

Cook for 15 to 20 minutes until fork tender, then drain thoroughly.

In a small bowl, toss 1 thinly sliced red onion with 1 tbsp white vinegar and let sit for 10 minutes to soften.

Arrange warm potatoes and 1 lb sliced salted herring fillets on a serving platter.

Top with pickled onion, drizzle with 2 tbsp sunflower oil, and garnish with 1/4 cup chopped fresh dill.
