Yucas Fritas
Crispy on the outside and tender on the inside, these golden cassava wedges are first boiled then fried for a satisfying bite.
Ingredients
- 2 lbs yuca root, peeled
- 1 tsp fine sea salt
- 2 cups vegetable oil

Bring a large pot of water to a boil and add half of the 1 tsp fine sea salt.

Cut the 2 lbs peeled yuca root into thick spears and boil in the pot for 15 minutes until tender.

Drain the yuca root completely and pat dry with paper towels.

Heat 2 cups vegetable oil in a skillet to 350 degrees Fahrenheit.

Fry the yuca root in batches for 5 minutes until crisp and golden brown.

Drain on paper towels and sprinkle with remaining fine sea salt.
