Che Ba Mau
A classic Vietnamese dessert featuring layers of sweet red beans, creamy mung bean paste, and aromatic pandan jelly. Served over crushed ice and drizzled with rich coconut sauce.
Ingredients
- 1/2 cup split peeled mung beans, rinsed
- 1 can canned red kidney beans, rinsed
- 1 tsp agar agar powder
- 1/2 tsp pandan extract
- 3/4 cup granulated sugar
- 1 cup canned coconut milk
- 1 tsp tapioca starch
- 1/4 tsp fine salt
- 2.5 cups water
- 2 cups crushed ice

Boil 1 tsp agar agar powder with 1/2 tsp pandan extract, 3/4 cup granulated sugar, and 2.5 cups water in a saucepan, pour into a shallow dish to chill, then slice into thin jelly strips.

Steam 1/2 cup rinsed split peeled mung beans with 1/4 tsp fine salt until tender, then mash into a smooth paste and let cool.

Simmer 1 can rinsed canned red kidney beans in a small pot for 5 minutes until glossy and sweetened, then cool.

Warm 1 cup canned coconut milk with 1 tsp tapioca starch over low heat until gently thickened into a cream.

Layer the red bean mixture, yellow mung bean paste, and green pandan jelly strips in tall glasses, then top with 2 cups crushed ice and coconut cream sauce.
