Ingredients

  • 2 cans canned red beans (or dried beans, soaked overnight), drained
  • 1 cup long-grain white rice
  • 6 cups water
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/2 stalk celery, diced
  • 1/2 carrot, diced
  • 1/2 cup tomato sauce
  • 2 sprigs fresh thyme (or dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 scallions (green onions), for garnish, chopped

Instructions

    Heat 2 tbsp vegetable oil in a large pot over medium heat. Add 1 chopped onion, 4 cloves minced garlic, 1/2 stalk diced celery, and 1/2 diced carrot. Sauté for 4-5 minutes until vegetables soften.

    Add 2 cans drained canned red beans (or dried beans, soaked overnight), 1/2 cup tomato sauce, 2 sprigs fresh thyme (or dried), 1/2 tsp salt, and 1/4 tsp black pepper. Stir well.

    Pour in 6 cups water and bring to a boil. Reduce heat to low and simmer uncovered for 20 minutes.

    Add 1 cup long-grain white rice to the pot, stirring well. Cover and simmer for 15-18 minutes until long-grain white rice is tender and liquid is absorbed.

    Remove from heat and let stand covered for 5 minutes.

    Fluff with a fork and garnish with 2 chopped scallions (green onions), for garnish. Serve hot.
