Kue Cubit
Traditional Indonesian bite-sized pinch cakes cooked in a small mold pan for a fluffy interior and sweet sprinkle topping.
Ingredients
- 2 eggs, beaten
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 cup whole milk
- 3 tbsp unsalted butter, melted
- 1/2 tsp vanilla extract
- 1/4 cup chocolate sprinkles

Whisk 2 beaten eggs and 1/2 cup granulated sugar in a mixing bowl until thick and pale.

Fold in 1 cup all-purpose flour and 1/2 tsp baking powder alternately with 1/2 cup whole milk.

Stir in 3 tbsp melted unsalted butter and 1/2 tsp vanilla extract until smooth, then let the batter rest for 10 minutes.

Heat a greased cake mold pan over low heat.

Pour batter into each mold until half full, cover, and cook until partially set.

Top with 1/4 cup chocolate sprinkles, cover again, and cook until the bottom is golden brown and center is cooked.
