Maultaschen
Traditional German pasta dumplings packed with a savory filling of minced meat, spinach, and herbs simmered in beef broth.
Ingredients
- 2 cups all-purpose flour
- 2 eggs, beaten
- 1/2 lb ground pork
- 1/2 lb ground beef
- 1/2 cup frozen spinach, squeezed dry
- 1/2 cup breadcrumbs
- 1 small yellow onion, finely diced
- 2 tbsp fresh parsley, minced
- 1/4 tsp ground nutmeg
- 1 tsp salt
- 1/2 tsp black pepper
- 6 cups beef broth

Mix 2 cups all-purpose flour, 2 beaten eggs, and 2 tablespoons of water in a bowl to form a smooth dough, then wrap and rest for 30 minutes.

In a mixing bowl, combine 1/2 lb ground pork, 1/2 lb ground beef, 1/2 cup squeezed dry frozen spinach, 1/2 cup breadcrumbs, 1 small finely diced yellow onion, 2 tbsp minced fresh parsley, 1/4 tsp ground nutmeg, 1 tsp salt, and 1/2 tsp black pepper until thoroughly mixed.

Roll dough into a thin rectangle, spread filling evenly over top, roll tightly into a log, and slice into 2-inch pieces.

Bring 6 cups beef broth to a gentle simmer in a large pot, add dumplings, and cook for 15 minutes until internal meat temperature reaches 160°F.
