Mi Xao Gion
Crispy fried egg noodles topped with a savory stir-fry of tender pork, shrimp, and vibrant vegetables in a rich gravy sauce.
Ingredients
- 8 oz fresh egg noodles, loosened
- 1/4 cup vegetable oil
- 1/2 lb large shrimp, peeled
- 1/2 lb pork tenderloin, thinly sliced
- 4 cloves garlic, minced
- 4 heads baby bok choy, quartered
- 1 cup carrots, thinly sliced
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 cup chicken broth
- 2 tbsp cornstarch, dissolved

Heat half of the 1/4 cup vegetable oil in a large skillet over medium-high heat.

Fry 8 oz loosened fresh egg noodles until golden brown and crispy on both sides, then transfer to a serving platter.

Heat the remaining 1/4 cup vegetable oil in a wok over high heat.

Add 4 cloves minced garlic and saute for 30 seconds until fragrant.

Add 1/2 lb thinly sliced pork tenderloin and 1/2 lb peeled large shrimp, cooking until pork reaches 145 degrees F and shrimp is opaque.

Stir in 1 cup thinly sliced carrots and 4 heads quartered baby bok choy and cook for 2 minutes.

Pour in 1 cup chicken broth, 2 tbsp oyster sauce, and 2 tbsp soy sauce, bringing the mixture to a simmer.

Stir in 2 tbsp dissolved cornstarch to thicken the sauce, then spoon over the crispy noodles.
