Nilagang Baboy
A comforting Filipino boiled pork soup cooked with potatoes, cabbage, and bok choy in a savory broth.
Ingredients
- 1.5 lbs pork belly or shoulder, cubed
- 6 cups water
- 1 yellow onion, quartered
- 1 tsp black peppercorns, crushed
- 2 tbsp fish sauce
- 2 Yukon Gold potatoes, quartered
- 1/2 head napa cabbage, chopped
- 4 heads baby bok choy, halved

In a large pot, combine 1.5 lbs cubed pork belly or shoulder, 1 quartered yellow onion, 1 tsp crushed black peppercorns, and 6 cups water.

Bring to a boil over medium-high heat, skimming off any foam from the surface.

Reduce heat to low, cover, and simmer for 45 minutes until pork belly or shoulder reaches an internal temperature of at least 145°F and is tender.

Stir in 2 tbsp fish sauce and 2 quartered Yukon Gold potatoes, then cover and cook for 10 minutes until tender.

Add 1/2 head chopped napa cabbage and 4 heads halved baby bok choy, simmer for 3 minutes until wilted, and serve hot.
