Turron
A classic Spanish holiday confection made with toasted almonds, honey, sugar, and egg white. It features a rich nutty flavor with a firm yet chewy texture.
Ingredients
- 3 cups raw blanched almonds, toasted
- 1 cup honey
- 1 cup granulated sugar
- 1 egg white, whipped
- 2 edible wafer paper sheets

Preheat oven to 350 degrees F. Spread 3 cups toasted raw blanched almonds on a baking sheet and toast for 10 minutes until golden brown.

Combine 1 cup honey and 1 cup granulated sugar in a saucepan over medium-low heat, stirring until sugar dissolves and mixture bubbles.

In a separate bowl, beat 1 egg white until stiff peaks form.

Slowly pour the hot syrup into the whipped egg white while whisking continuously.

Return saucepan to low heat and stir continuously until mixture thickens and turns pale amber.

Fold in toasted raw blanched almonds until evenly distributed.

Line a small rectangular pan with 2 edible wafer paper sheets, pour in mixture, level top, cover with second sheet of edible wafer paper sheets, and let cool completely before slicing.
